How is Highland beef different?
The Scottish Highlander has a lean, well-marbled, meat that ensures tenderness and succulence with a very distinctive flavour. Highland beef is healthy and nutritious with lower levels of fat and cholesterol and a higher protein and iron content than other beef.

Our beef will be locally butchered in a licensed establishment on Dec 8th and ready around mi-December. Beef can be ordered:
Whole (Approx 250lbs hanging weight)
Half (Approx 125lbs hanging weight)
Split Quarter (Approx 65lbs hanging weight)
Variety Box (25lbs final weight)
Cut sheets will be provided for orders on whole or half beef so that you can select exactly how your meat is cut and wrapped. Weights vary and priced according to hanging weight.
Split quarters will contain a quarter beef mixed between the front and the hind quarter including a selection of prime cuts, roasts, steaks and hamburger. Weights vary and priced according to hanging weight.
Variety boxes contain 25lbs of meat with 12lbs of ground beef, 10lbs of steak in a variety of cuts including prime cuts as well as a 3lbs roast.
